You know how it is – you buy a box of soft cheese on a whim, then you have a load to use up. This is one tasty recipe idea to do just that.
- Soft cheese
- Two cloves of garlic
- Salad or other baby Potatoes
- 0ptional breadcrumbs, salt, pepper and herbs
Take the potatoes and cut lengthwise. Place in a pan of salted boiling water until soft.
Meantime chop the garlic, leek and onion finely and add to a frying pan with some olive oil. Heat on high for a few minutes, taking care to reduce heat as they brown. Chop up the bacon and add this in too. Add some sliced tomato. When cooked set aside.
Remove the potatoes from the heat. Pour the bacon and onion/leek mixture into a bowl. Add the soft cheese and mix together. Place in an ovenproof dish, topped with the sliced cooked potato. Scatter over a few herbs, breadcrumbs and pepper. Place in a pre-heated oven for an hour on high or until the potato topping is crisp and brown.
Serve with a colourful salad of tomato, lettuce, cucumber and pepper.
For a vegetarian option, use mushrooms instead of bacon. For a slimming version, leave out the carbohydrate potato topping and breadcrumbs and top with a layer of fried mushrooms instead.
